On Friday afternoon and all day Saturday of last week (31st January and 1st February) I attended another olive oil tasting course. The course, which was excellent, was given by three expert olive oil tasters, one of whom is a world authority. The sessions were very long which demanded a lot of concentration and the need to have small breaks every now and then. We tasted a lot of olve oils of varying qualities and spent quite a lot of time on recognising typical defects and the causes for their occurence. As well, by the end of the course we were all getting a lot more adept at filling in the official olive oil tasting sheets. In the photo below, you can see me on the right hand side in a state of total concentration as I try to identify the aromatic components of an olive oil!
